Rice Crispy Treats ~ GF & Vegan

Rice Crispy Treats were a childhood favourite of mine. They were easy to make, although I do recall my babysitter once burning the marshmallows and ruining the pot she melted them in but all in all, it was a pretty simple and satisfying treat for an impatient child. These treats taste incredibly similar to the treats I indulged in 20 years ago but also happen to be gluten free, vegan and even healthy. There are no marshmallows, butter or added sugar in this recipe.

Makes one 9-inch square pan, equaling 9 treats.

Ingredients:[if !supportLists]

  • 4 cups brown rice crisp cereal (I used One Degree Veganic Sprouted Brown Rice Crisps)

  • 2/3 cup brown rice syrup

  • 1/4 cup coconut oil

  • 1 tsp vanilla extract

  • 1/4 tsp sea salt

Instructions:

  1. Line a baking tray with baking paper and set aside.

  2. In a large mixing bowl, add your crispy rice cereal and set aside

  3. Combined brown rice syrup and coconut oil in saucepan on med heat.

  4. Boil briefly (1-2 minutes, dont let burn!) then take off heat.

  5. Stir in vanilla and sea salt.

  6. Pour liquid into the cereal and mix.

  7. Pour combined mixture into the lined baking tray and press firmly into place.

  8. Refrigerate for at least 30 minutes to firm up. *Optional - Add desired toppings. I added peanut butter and chocolate drizzle, shredded coconut, sprinkles, coconut sugar and cacao butter.
