Ultimate Oatmeal Cookies

What's big and chewy and can disappear in 30 seconds? Why, an oatmeal walnut chocolate chip cookie of course!

Each cookie is about a 1/3 of a cup of dough, so this is almost a meal sized cookie. Serious business! haha

You can of course make them smaller but in my opinion, bigger is always better. These are chewy and filling and have lots of different textures. Everything equaling delicious.

Enjoy these with a big glass of almond milk or, as I like to enjoy any cookie... with a tall cold glass of water. (It's refreshing! Stop judging!)

This recipe makes 8 large, thick and delicious cookies.

Ingredients

  • 3/4 cup flour

  • 1 1/2 cup rolled oats

  • 1/2 cup chopped walnuts

  • 1/2 cup dark chocolate chips

  • 1/2 cup vegan butter at room temperature

  • 1/2 cup brown sugar

  • 1/4 cup white sugar

  • 1 flax egg (1 tbsp ground flax mixed with 2.5 tbsp of water)

  • 1 tbsp molasses

  • 2 tsp cornstarch

  • 1 tsp cinnamon

  • 1/2 tsp baking soda

  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350° and line cookie tray with parchment paper.

  2. In a small bowl, combine flour, oats, cinnamon, baking soda, salt and cornstarch. Set aside.

  3. In a large bowl, cream together the vegan butter, brown sugar, white sugar, flax egg and molasses. Stir until smooth.

  4. Add dry ingredients to the wet and stir until everything is mixed.

  5. Add the walnuts and chocolate chips.

  6. Roll approx 1/3 cup of dough between hands.

  7. Place round balls of dough on cookie sheet and gently press flat with the back of a spatula. (not too thin)

  8. It should make large 8 cookies.

  9. Space evenly and bake for 15 minutes.
